2021年8月，第一家“柿合缘新京菜”在陆家嘴国金中心开业，“柿合缘 ”谐音“ 四合院 ”，地域性格突出。“柿合缘新京菜 ”是甬府大师系列推出的第一 家餐厅，由名厨段誉掌勺。段誉作为新京菜创作者，以现有京菜的烹饪方法为基础，结合从花艺、茶道悟出的美学理论，对传统京菜进行改进和再创造，风格独树一帜，京韵悠长。“柿合缘 ”菜单不但带来了段式新京菜的招牌菜品，也会有芝麻糖饼、炒饼等大家喜闻乐见的北京小吃。同时，段誉还会用东海小海鲜进行融合创作部分菜品，以延续甬府餐饮品牌的DNA一致性。

The first Shihe Yuan · New Beijing Cuisine opened at Shanghai IFC in August 2021. The name Shihe Yuan is a play on siheyuan, the traditional Beijing courtyard house, reflecting the restaurant’s strong connection to the capital and its culinary traditions. As the first concept launched under the Yong Fu Master Series, Shihe Yuan is led by renowned chef Duan Yu, a pioneer of New Beijing Cuisine. Drawing on traditional Beijing cooking techniques alongside aesthetic influences from floral art and the Chinese tea ceremony, Chef Duan reinterprets familiar flavours through a contemporary lens while preserving the character of Beijing cuisine. The menu brings together Chef Duan’s signature New Beijing dishes and much-loved local favourites, including sesame sugar pancakes and Beijing-style fried noodles. Selected dishes also incorporate seafood from the East China Sea, creating a connection with Yong Fu’s culinary roots.
